Paleo Shrimp Scampi

2 Zucchinis
2 Summer Squash
⅓ Cup Grass Fed Butter
1 Red Bell Pepper, diced
1 Package Cherry Tomatoes
¾ Cup Shallots, minced
¼ Cup Garlic, minced
1 Jar (2.4oz) Capers, drained
1 tsp Red Pepper Flakes
Salt & Pepper to taste
4 Tbsp Dried Parsley (½ Cup Fresh Parsley)
2 tsp Dried Basil (⅛ Cup Fresh Basil)
1 Lemon, sliced

1) Preheat oven to 450°F.
2) Put zucchini and summer squash through spiralizer and set aside.
3) Melt ⅓ cup grass fed butter in frying pan. Add red peppers, tomatoes, shallots, garlic and red pepper flakes. Simmer until vegetables have softened.
4) Add capers, parsley, basil, salt, and pepper.
5) Add clams and raw shrimp.
6) Transfer mixture to baking dish. Add slices of lemon.
7) Place in oven for 20 minutes, stirring occasionally.
8) Melt 1 Tbsp of grass fed butter in used pan so you can use the flavors from vegetable mixture. Pan fry white fish and scallops.
9) Add cooked seafood to mixture in oven for final 5 minutes.
10) Remove from oven, squeeze lemons over the dish and stir to combine.
11) Add spiralized vegetables to fry pan and stir continuously until heated through.
12) Place spiralized vegetables in dish. Top with seafood mixture. Enjoy!
